Here at Delish, we're very pro-pickle. We love chips, spears, spicy, bread & butter, we even love the brine! Usually, we're using 'em straight from the jar, but when it's summer and the cucumbers are fresh, we like to make them ourselves!
There are a ton of different recipes out there, but we were inspired by this boozy one because, well, we love booze! Gin & tonic is one of my personal faves, and it's herby bitter qualities seemed like the perfect match for our crunchy summer cukes.
We added some lime (because what is a G&T without limes?) but kept it pretty simple otherwise. Gin already brings so much flavor we didn't want to try to sneak anything else in. We suggest soaking at least overnight, but we found the best results came after the pickles soaked for a couple days.
The results were kind of amazing! One caveat: if you're not a fan of Gin, this might not be the recipe for you. If you are, you'll love these. They're super herby and delicious, they were a total crowd pleaser. I'd suggest serving them on a charcuterie plate, on a sandwich, or just by themselves for some very fancy snacking!
