Looking for a fun dessert to kick off summer? Look no further: this rainbow ice cream cake has got it all. It's frosty and delicious, it looks super impressive, and the best part is, it's not hard to make!
The cake starts with our classic no churn recipe — it's way easier to work with than ice cream. It's only three ingredients: heavy cream, sweetened condensed milk, and vanilla. Simply whip the cream and vanilla and fold in the sweetened condensed milk and you've got your base! We used classic rainbow colors but feel free to make it your own.
Unmolding an ice cream cake can be tricky so we've taken extra precautions. First, we sprayed the loaf pan with nonstick cooking spray. Next, we lined the pan with plastic wrap. This might seem redundant, but the spray helps the plastic stick to the sides of the loaf pan to minimize the look of wrinkly edges when the cake is unmolded.
If you really want to impress your guests, you can slice ACTUAL rainbows out of the rainbow cake! Simply cut the cake into 1 inch slices, then use a paring knife to shape in into a rainbow. Extra points if you whip some cream and serve it in clouds!
