Rainbow food is the happiest type of food around. Anytime there are ROYGBP layers involved, you're bound to smile, regardless of how you feel about food coloring. And this fudge might be the prettiest, most smile-worthy recipe we've made yet. No, those aren't rubber erasers you're looking at (as some people at Delish thought they were); they're rainbow fudge bites!

Full disclosure: These take some time and patience, which should be expected for a stack with 6 different colors.

The fudge-making itself is easy. All you're doing is melting down white chocolate chips with sweetened condensed milk and almond extract (or vanilla). The next part — separating the fudge mixture into 6 bowls and dying each one with food coloring — isn't so bad either. Assembling the fudge, however, is a slight pain in the neck. You can do it though!

Essentially, you need to spread an even layer of fudge for each color into an 8-x-8" pan. This issue is that the (still warm) fudge is a sticky and hard to spread, especially when your pan is lined with parchment paper, which it should be. To make spreading easier, grease your hands with cooking spray. I know it sounds odd, but it makes a huge difference. It also really helps to spread each new layer into a separate 8-x-8" pan lined with parchment and invert the new layer onto the one before it. It sounds more complicated than it looks — just watch the video!
