Here at Delish, we've been going s'mores CRAZY. We've given everything we can think of the s'mores treatment, and yes, that includes burgers. One of our favorite s'mores pairings is, duh, alcohol. Half dessert, half cocktail is always a recipe for success. These s'mores jello shots might just take the cake for most fun summer drink.
They might look hard to make, but I was actually shocked by how simple it was. The secret to hollowing out marshmallows easily is a small sharp serrated knife. Turn the marshmallow, not the knife, until you've made a complete circle about a centimeter from the edge of the marshmallow and use the knife as leverage to scoop out some of the gooey exterior.
The other trick is roasting the marshmallows with a fork. The fork's tines stretch the opening even more to allow for more booze! Very important! They also provide a sturdy grip for stovetop toasting.
One more helpful hint: let the jello shot mixture cool to room temperature before pouring into your hollowed marshmallows. If you don't the marshmallows will melt as they're being filled, and who wants to clean up that mess? I suggest making the jello mixture first so you can get the marshmallows ready as it cools.
