When it comes to low carb hacks, nothing beats cauliflower. We've used it to replace bread in pretty much everything we could think of. From burgers to grilled cheese to calzones, we've pretty much rendered bread obsolete. (OK, sometimes we still indulge.)

Just when we think we've done it all, a new use for cauli strikes us and we can't stop ourselves from giving it a shot. I'm a huge fan of this iteration because it is perhaps the easiest way to get your cauli into a sturdy, bread like form. Enter: the waffle iron! HOW did we not think of this sooner?!

This cauliflower mixture is very similar to our usual batter, part cauli rice, part cheese, some eggs for binder and a little cornstarch to combat starchiness. I used a combination of mozzarella and Parmesan but feel free to use whatever cheese you love most. Cheddar would go great with a scrambled egg and pico topping! Or try classing it up with some gruyere and caramelized onions!

The possibilities are endless with these crispy little waffles. We made all breakfast toppings but they're versatile enough for any meal. (Plus breakfast for dinner over EVERYTHING) We also chose open face but we have a feeling these would be pretty killer as buns for a burger or breakfast sandwich.
