First there was cauliflower pizza crust. Then came the tots, calzone and quesadilla. Now there are cauliflower burger buns. Did we go too far? Yeah right! Can't stop, won't stop.
Everyone knows burgers are the name of the game during summer. And you can't have a burger, or at least a good one, without a bun. The options are usually really soft bad-for-white bread or dry, healthy-tasting wheat roll. It's a tough situation to be in considering you're likely eating this burger in a bathing suit. Enter: cauliflower buns! Unlike the wheat wanna-be buns, they actually taste good.
The recipe is simple: Process a head of cauliflower until it's rice-like in texture.Or start with cauliflower rice! Microwave the processed cauli to steam it, then squeeze out as much moisture as you can. (This prevents sad soggy buns.) Stir in an egg, some Parmesan, corn starch, and seasonings and form the mixture into small bun-sized rounds. Sprinkle with sesame seeds (to make it legit) and bake until golden.
Slightly crisp on the outside and soft on the inside, this low carb alternative isn't just a healthy compromise … it's a major upgrade. Don't try to pretend you're cauli-ed out.
