As warm weather approaches so does one of the most important summer food groups: boozy popsicles. What other food keeps you cool, gets you drunk, and provides next level adorable Instagrams?
So to kick off summer we decided to make boozy popsicles with one of the most celebratory beverages there is: Prosecco! It goes with pretty much any fruit, but we went with a mix of summer berries. Peaches, watermelon, or cherries would be just as good so feel free to experiment. We chose to top ours off with lemonade and pink lemonade for a citrusy twist, but again, there's lots of wiggle room there too. Try orange or grapefruit juice for a more mimosa-y vibe!
Simply fill popsicle molds with the fruit of your choice, and fill 3/4 full with Prosecco. Top it off with your favorite juice and throw those babies in the freezer! These things are a breeze to make, because who wants to hang out in the kitchen on a beautiful summer day?
Because of the high alcohol content in these popsicles, they tend to melt on the fast side, especially if you're taking them outdoors. If you prefer the popsicles to stand up more to the summer sun, I suggest a 1/2 and 1/2 combination of juice and booze.
So go forth and toast to summer, in the chillest way possible. 😎
