These mini tortilla boats are loaded with everything we crave when summer hits: a zesty marinade, tender, juicy grilled chicken and tropical sweet and refreshing mango goodness. By the way, this recipe makes a dozen, so plan to share—or, you know, don't.

Start by seasoning Perdue Fit & Easy Boneless, Skinless Chicken Breasts with salt and pepper. Then whisk together this quick, flavorful marinade in a large bowl: olive oil, lime juice, cilantro, garlic, cumin, and red pepper flakes. Add your chicken and toss it in the marinade, then let it marinate in the refrigerator for about 30 minutes.

Fire up your grill to medium-high heat and grill the chicken until cooked through and no longer pink. Let the chicken rest for a few minutes, then chop it up.

In a new bowl, toss together chopped chicken, chopped mango, and chopped avocado and add the filling to your mini taco boats. Garnish with cilantro and serve with lime wedges for drizzling on more of that acid that makes tacos so, so good.
