Wanna take a basic cobb salad to the next level? It's so easy—just skip the regular ol' chicken breast and go for popcorn chicken instead. The swap will get even the most anti-salad among us to eat their greens.
Putting it all together is super simple, too. Just grab a bag of Perdue Popcorn Chicken and bake half of it. Now, if it weren't for the crunchy popcorn chicken, honestly this dressing would steal the show. Make it by mixing together Greek yogurt, mayo, buttermilk, crumbled blue cheese, chopped fresh chives and parsley and a dash of salt and pepper.
For the rest of the salad, assemble it in a bowl (we used popcorn containers) with mixed lettuce, the cooked chicken, cherry tomatoes, avocado, hard boiled eggs and cooked bacon, and then sprinkle on the dressing.
