Here's my true confession for the day: I love a handheld meal. From cauliflower pizza bites to s'mores cookie cups, banana pancake dippers to ham and cheese roll ups, I'm all for anything I can nom on the go. I'm also a huge fan of fair food (we're getting really honest here …), which often goes hand-in-hand (pun intended) with hands-free foods. Fried Twinkies, chicken on a stick — no shame in my handheld game!

But there is one one-handed food that trumps all others, combining the best in on-the-go munchies and super savory goodness. BEHOLD: the BBQ Sundae.

The inspiration for this dish didn't hit all at once … more like a trail of (corn)bread crumbs dropped to lead me to a culinary epiphany (thank you, snack Gods!). And for that, I have the Texas State Fair to thank. I feel like I've eaten every cone under the sun at the fair: bacon cones, turkey cones, crunchy avocado cones. So while daydreaming during last week's blizzard about the Sunday barbecues I'd attend this spring (and all the delicious foods I'd be eating), I struck gold: BBQ Cones!

The idea soon morphed into the layered goodness before you today. BBQ Sundaes use all the elements of a classic Sunday backyard barbecue buffet: cornbread, baked beans, mashed potatoes, coleslaw, barbecue chicken — even pickles! — all layered together in a beautiful, smoky parfait, barbecue sauce drizzle and all.

Bonus: they're easy to eat while walking at a barbecue, meaning you can chat with friends, enjoy the party, and munch all at once. And of course, they couldn't be easier to make.
