If you follow Delish closely, you might have noticed something since the New Year: We've fallen HARD for low-carb recipes. But not just the same old boring burrito bowls or lettuce wraps you see everywhere—we're getting way more creative with our no-bread forays. Last week we introduced Cauliflower Grilled Cheese to the world (you guys freaked); the week before, BLT Sushi. And now: Avocado Bun BLT. Yup, we might be legit crazy now.
As a California girl, I heart avocados so much. I eat avocado toast almost every morning for breakfast and am always thinking of ways to incorporate more of the superfruit into my diet. Using a whole avo as a bun is definitely one way to do it. This kinda qualifies as more of a fork-and-knife affair, but you can also just get a lil' messy.
To make an Avocado Bun BLT, you halve, pit, and peel an avocado, then slather both sides with mayo and season with salt and pepper and sandwich with cooked bacon slices, romaine, and tomato. The must: Sprinkle the avocado top with sesame seeds to create a true bun effect. Then take a picture of this alien avocado baby—wouldn't Kermit be proud?!—and chow down.
