One thing I know: how to cook a steak. I normally am not one to geek out on the perfect way to cook this and that (science was never my strong suit, let's be real), but when it comes to steak, there really are some tips you need to follow.
1. SEASON GENEROUSLY.
Seriously, don't even try to season with anything but a THICK layer of salt. Coarse salt, not the fine grain stuff. Blanket it on because that's what will create a delicious crust once you sear.
2. GET THE SKILLET HOT HOT HOT!
One of the biggest mistakes you can make is not getting your skillet hot before you add the meat. You want the skillet SMOKING. Well, not exactly, but almost smoking—so hot that when you add the steak it sizzles and smokes and creates all the amazing sounds that lets you know that meat is searing. Don't touch it! Party foul. Let it sear undisturbed for a few minutes until you ...
3. BAKE IT
The best method for steak is sear-roasting, so, as the name implies, you sear it in a hot skillet to develop the crispy crust, then you transfer it in the same skillet to the oven to finish cooking. To keep it rare, only give it 10 minutes in the oven. If you prefer a more medium steak, keep going for about 13 to 15.
The results are so hot they'll make your head spin.
