Life lesson learned at Delish: You can't go wrong with a cheeseball. It wins. Every. Single. Time. Cream cheese, mixed with more cheese, and topped with a bunch of salty crunchiness … how could it not? And if there were ever a party for a cheeseball to shine its brightest, it's during the Super Bowl — the ultimate snackdown of the year.
You may notice the cream cheese mixture is very similar to our cheeseball bites. If you made the cute little apps during the holidays, you know they're too dang good to change too much. To tackle this giant football version and make it more game day appropriate, we shook in some hot sauce, added more cheese (monterey jack and cheddar) and ditched the pecans for pretzels. And we made mozzarella laces. Touchdown!
The recipe couldn't be easier—beat everything together, shape the mixture into a football, then press pretzels, bacon and scallions all over. The only trick is mixing the cream cheese at just the right time, which is right at room temperature. When the blocks are too cold, the mixture will be clumpy; too soft and the cheeseball will deflate more than Tom Brady's. If the cheeseball is a bit too soft, don't be a sore loser. Stick the whole thing in the refrigerate to firm up a bit (about 30 minutes). The Pinteresty cheeseball beauty will be worth the wait.
