The unicorn food trend is one we really hope to keep seeing throughout 2017—because we fall in love with each creation more than the last. Current obsession: this no-bake unicorn cheesecake. But our love affair with the dessert trend started around Easter, when we did Unicorn Bark, falling for the pastel swirls of melted chocolate. That trend continued into summer, when we made unicorn ice cream, a frozen treat so bizarrely colorful it guarantees a brain freeze.

And now, perhaps the most delicious of our unicorn creations. This super-simple cheesecake takes virtually no time to prep and is just straight-up fun to make. You start with our classic base for no-bake cheesecake—cream cheese, sugar, heavy cream, and vanilla—which you beat until fluffy with a hand mixer. Then you divide that mixture into different bowls; the number of bowls depends on how many colors you want. I like to use blue, green, yellow, purple, and pink. (For the best final results, go hard on the blue and yellow.) Dye each bowl of the plain cheesecake mixture a different color—oh, if you haven't already noticed, you have to be very supportive of food coloring to be in on the unicorn trend.

Now the fun really begins: Get a graham cracker crust (Oreo works, too!) and start dolloping different colors of the mixture into the crust, alternating at random, until you're at the top and completely out of cheesecake mixture. Use a knife to gently swirl the colors together, but not so much that they start to muddy. Top with sprinkles (the more, the better) and stick in the fridge to firm up for about 6 hours.
