If you're ready to shout "THERE'S NOTHING BETTER THAN PUMPKIN PIE!" I get it. People have very strong feelings (some nicer than others) about the autumnal American treat. But before you get all traditional on me, expand your mind to the idea of a pumpkin pie made with cake batter instead of pie crust. Still with me? Thought so. This Pumpkin Pie Cake is technically a "magic cake", the latest Pinterest dessert obsession.
The "magic" is that you—get this—pour the cake batter into your prepared baking dish and then pour your pumpkin pie filling layer on top of that ... and then bake. NO stirring. The result is a pumpkin pie center with a cake crust; in other words, the most magical combination for a fall dessert.
We tinkered with this recipe again and again to make sure the pumpkin filling doesn't sink. Finally we got it with a dense pumpkin filling, with just enough evaporated milk to keep it traditional to pie. Oh, and bonus: Some magic cakes create two distinct layers as they bake, but this one gets a gorgeous Instagram-worthy swirl. Magic!
Do make sure to let it cool completely before serving. We just dusted with powdered sugar, but no one would shut down a dollop of whipped cream.
