Like it or not, September starts tomorrow and just like that, s'mores season ends. Is anyone ready to say goodbye to gooey, chocolatey graham? No. Luckily, s'mores cupcakes make it easy to cope.

With a graham cracker bottom, fudgy chocolate cake and a gooey toasted marshmallow, these cupcakes truly capture the essence of the beloved campfire treat. The cake—boxed devil's food—and graham cracker crust were easy to figure out. The topping was a little trickier, to say the least. Let's just say that we almost called the fire department.

We wanted big melty marshmallows instead of frosting. So after drizzling the ganache, we topped each cupcake with one campfire-sized mallow and threw them under the broiler … thennn forgot about 'em. Cue fire and panicked food editors. We survived the fiery flames of burnt sugar but the cupcakes did not. So we nixed the broiler and returned the cupcakes to a 350 degrees F oven and waited until the marshmallows were soft, puffed and golden. The cake doesn't dry out and you won't need to reach for the fire extinguisher.
