As long as there's bacon, egg, and cheese, there's no wrong way to eat a breakfast sandwich. Whether you prefer a hard roll to a bagel, or American cheese to cheddar is of no interest to me. But I feel it's my duty to tell you about this particular BEC. It checks off all the right boxes—runny yolk, crispy bacon, melted cheese—plus some.

There are many benefits with cooking the egg in the bread. First, it's almost impossible to overcook the eggs. They cook more slowly in the center of a slice of a bread (or in a burger), which increases the creamy yolk potential. Then there's the crispy egg bottom. Any whites that go through the bread sizzle in the butter to take on a frico effect. It's AMAZING. Finally, there's less mid-process clean-up involved. There's not need to wipe out the pan in between making the eggs, toasting the bread and melting the cheese. That's all done at once, which means you can eat sooner!

If you find yourself desperately in need of a good day, start the morning with this sandwich. It's impossible NOT to be happy while eating it. And even if things are fine and dandy (yay!), treat yourself to this fine piece of breakfast art. You too deserve a perfectly cooked egg atop a crunchy sourdough sandwich filled with bacon, avocado and cheese.
