I didn't realize that one thing a few of the most popular restaurant chains—The Cheesecake Factory, CPK, BJ's—have in common is that they all serve avocado egg rolls. The ridiculously tasty appetizer is clearly beloved, so I wanted to know how to recreate them at home. Besides, making egg rolls is surprisingly simple (check out these deadly bacon cheeseburger ones) and stuffing healthy avocado inside of fried dough seemed, well, genius.

As soon as my coworker bit into one of these his reaction was "These taste just like the Cheesecake Factory's!" HUGE compliment. A blend of avo, sun-dried tomatoes, cilantro, garlic, and lime juice, CF's avocado egg rolls are a beloved menu item. To make them, you basically whip up a similar mixture to guac, then roll it up in an egg roll wrapper and shallow fry until golden.

You can eat them straight out of the skillet (SO GOOD), or dip them in a quick sour cream-lime sauce that will be ready by the time you're done frying the egg rolls. Cheesecake Factory serves theirs with a fancy tamarind sauce, which was a little too exotic for my purposes, so I improvised. Obviously ranch or Sriracha would also make excellent contenders, too. Roll out!
