I've said it before, and I'll say it again: chocolate and peanut butter is the best combination of all time. Period. That's why Tagalongs (also known as Peanut Butter Patties, depending where you live) are the best kind of Girl Scouts cookies.
If you think the cookies you buy from your worker's daughter are decadent, just wait until you try this pie. It's DECADENT times one million. It's so indulgent that I, the peanut butter-chocoholic I am, could only handle a tiny sliver—which means that you'll probably only need a few bites.
Most peanut butter pies I've had start with a graham cracker or Oreo crust. Here, you have a sugar cookie crust. I used refrigerated dough and people flipped out and asked me for the recipe. So don't even bother making something homemade. The peanut butter filling is perhaps the best thing I've whipped up all year. If I could eat a bowl of it everyday for the rest of my life (without gaining 1,000 pounds), I would. If you scraped out the insides of a peanut butter cup and a Tagalong and mixed them together, I imagine it would taste like this pie filling. Peanut butter heaven.
After the ganache layer is poured, you're set flavor-wise. You could slice right into the pie be extremely happy, but you'll be even happier with the melted peanut butter swirl. It's 100% optional but 110% encouraged. You don't need to be a pastry artist to swirl. Anyone, even the littlest of Girl Scouts Daisies, could make the spider web pattern with a toothpick.
