A few months ago, we did a mash-up of our favorite summer salad—caprese—with a skillet chicken dinner, and a star was born. Because who doesn't like caprese? The four ingredients–mozzarella, tomatoes, basil, and balsamic–scream summer like none other. We live off caprese this season, but not for dinner. We wanted to turn that light appetizer into a hearty dish everyone in the fam could get behind.
So, if we loved caprese chicken so much, why not translate the idea to another protein, like steak? TBH, we were skeptical. "Mozzarella on steak?!" was my immediate thought. I couldn't tell if it was making me salivate in hunger or disgust. But I had a creeping suspicious it would be a surprisingly delicious combo, so I stuck behind it.
Shocker: It's insane. Everyone in the test kitchen was losing their minds over how perfectly these flavors come together. You make a simple marinade for the steak of balsamic, lots of garlic, dried thyme and oregano, honey, and olive oil, then grill the steaks (you could also sear in a cast-iron). When they have a few minutes left, top with some mozzarella and nice tomatoes (I used beefsteaks) and cover the grill so the cheese gets nice and melty.
Finish it with basil and you have a killer summer dinner.
