Full disclosure: These bacon-wrapped avocado "fries" don't taste like French fries—and they're not trying to. Traditional fries are salty, crispy and hopelessly addicting. These avocado wedges are smoky, creamy and so rich, you can really only handle a couple (although your taste buds will scream for more).
To be completely honest, I was skeptical about the idea of avocado fries for a long time. Warm avocado? It's not something I had tried or was eager to try. Something about heating a perfectly ripe Hass seemed wrong. So I resisted the idea … until I heard about bacon-wrapped avo fries. Bacon is always the game-changer.
I went forth testing bacon-avocado fries expecting a plethora of obstacles. Visions of undercooked bacon and avocado mush swarmed my head. But the first batch emerged from the oven perfectly crisp and not at all mushy. They looked beautiful, as all bacon-wrapped things do. Still, the taste was my main concern.
I can confidentially say that if you're a fan of bacon and avocados, chances are very high that you'll like them together in this recipe. If you're skeptical about warm avocado, try eating the snack at room temperature. That's how I, along with most people in our kitchen, preferred it.
