They say that breakfast is the most important meal of the day. If it's true nutritionally, I honestly can't say. But I do believe we should really be putting more thought into our morning meals. Think about it: it's the first thing you taste all day. Don't you want to start off on a happy and delicious note?
Weekday mornings are rough. I consider having time to just toast bread before work a victory. Saturday or Sunday am, on the other hand, is when I like to step up my breakfast game. And by stepping it up, I don't mean splurging on breakfast sausage. I mean wrapping the links in tortillas stuffed with egg and cheese and making TAQUITOS.
These breakfast taquitos are game-changing. Don't be intimidated. If you can scramble eggs, you can make them. As long as your tortillas are warm, rolling is easy. You could fry the taquitos, but we baked them to feel better about all the cheddar we used. They still get super crunchy and golden in the oven.
