Pizza can be intimidating to make. Even the store-bought dough you find in the freezer aisle can be fussy. The solution that you probably already know, but don't make enough: french bread pizza. To keep things simple, start with rotisserie chicken. Shred it up, then throw it in a pan with your favorite jar of salsa, a squeeze of lime, some chili powder and cumin. It takes 5 minutes but tastes like it's been simmering for hours. De nada.

For the toppings, I couldn't decide between mozzarella and monterey jack, so with the encouragement of our managing editor, I used both. Obviously the two together tasted marvelous. For more Tex-Mex fun, corn and black beans were also thrown into the mix. The result is a fiesta-worthy snack everyone will love.
