Our obsession with buffalo sauce is no secret. Neither is our love for cauliflower. We'll douse Franks on just about anything—pasta salad included. And there's no limit to where we'll take the white florets. We chicken-fried it, for goodness sake. Obviously, buffalo cauliflower is a match made in heaven. We eat it all the time—it just took a while to realize we should make a video and share our favorite recipe. Sorry for the delay.
Tossing cauliflower in buffalo sauce right from the get go, and before the oven, is one way to go about it. It's delish, and we love it. But if you want a truer buffalo-wing taste, roast the cauliflower on its own first. Whisk together melted butter and hot sauce, then toss it into the roasted florets and bake for another 10 minutes. Serve with blue cheese dressing or ranch (we find the latter less divisive) and go to town!
Don't be shy. These spicy bites are so many things: vegetarian, guilt-free and all around insanely AWESOME.
