Appetizers can be tricky. When I'm entertaining, I typically go for dip, dip, and more dip because I know how much people love them. But sometimes having a more assembled appetizer is an impressive move. For summer, there's nothing more appropriate as an appetizer kebab.
Why so appropriate? People LOVE kebabs, of all kinds. A caprese one is a smart fallback—total crowd-pleaser—but you can do better. These cheeseburger kebabs are ridiculously easy to assemble. First step: Making cheeseburger meatballs! They do taste like burgers (thanks to Worcestershire and mustard) and get topped with a mini square of cheddar in their last two-minutes of cooking.
Once the meatballs are cooked, it's time to assemble the skewers. Get creative based on your burger order. I'm basic with a love of pickles, tomato, and lettuce, but bacon would have been an excellent addition.
