Toasting s'mores over an open fire is the quintessential summer activity that I look forward to every Memorial Day—the season opener! At Delish we love the flavor of s'mores so much, we wanted to figure out how to get s'more of it into our lives (see what we did there?), which is why we came up with this insanely layered s'mores icebox cake.
If you don't know what an icebox cake is, get with the program! It's the best type of cake for summer because, as the name implies, it just sits in your fridge (called an icebox in the '50s, when this treasure of a dessert was invented) and the cookie or cracker you use softens and the flavors meld.
To get the true s'mores flavors, we obviously knew graham crackers, chocolate, and marshmallows all needed to be involved in a major way. Chocolate ganache—don't let the word ganache intimidate you; it's a two-step, five-minute process that's mostly hands-free—is the chocolate layer and a whipped marshmallow fluff-infused cream gives you the marshmallow layer.
The result is a super-easy, super-impressive dessert to bring to pretty much anything you hit up this summer. S'mores obsessives are guaranteed to come back for, well, s'more.
