When I fly back home, ordering an animal-style cheeseburger with fries (also animal-style) is usually at the top of my itinerary. But because of work, culinary school and an increasing amount of grown-up things, I find myself on the golden coast less and less. I miss my friends and family everyday ... and also double-doubles.

To make up for the 355 days I'm thousands of miles away from the closest In-N-Out, I made these copycat animal-style burgers. Just like the original, they're seared in yellow mustard, served over secret "spread" and topped with caramelized onions. The "spread" (or the special pink sauce) is a combination of mayonnaise, ketchup, sweet relish and a pinch of sugar. My advice? Bring out the inner animal (style) in you, and make fries so you can pour it over those too.

One bite will take you back to a sunny summer day on a palm tree-lined street eating a double-double and wanting nothing more in life. If you've never ordered off the (not-so-secret) menu, you'll have to trust this Cali girl. The taste is spot on.
