If our thousands of chicken recipes prove anything, it's that we love chicken—A LOT. Whole, legs, breast or thigh, we don't discriminate. But like many people, breast is our jam. In the Delish test kitchen, you will always find a package (or five) of the skinless, boneless kind in our fridge. It's easy, however, to get in a chicken rut.
When you fall in love with a dish, it's hard not to make it over and over and over again. A dish may taste incredible the first time you make it ... but not so sexy after the 313th time. I sometimes find myself in this situation with grilling the bird, and as a result, dinner is boring. But there's no excuse. Chicken is such a versatile protein, there will never not be a new way to cook it.
This is my new favorite dinner to throw on the grill. It all starts with a doctored salad dressing marinade. Tossing cubed chicken with your preferred Caesar dressing plus olive oil and lemon is easiest way to get flavorful, tender chicken—stat. After just 30 minutes, thread it onto a skewer and get your grill on. And while you're at it, char up some cherry tomatoes and bread cubes too. For a salad you can eat with your hands (aka the best way to do it), load everything onto whole and crisp romaine leaves. This will be the only way you want to eat Caesar salad from now on. Even though you'll want to, try not to make it everyday, all summer long.
