The whole grain superfood will make you feel super good, thanks to all that protein. If it's not already a staple in your pantry, you'll learn to love its subtle nuttiness and fluffy texture. Quinoa is my favorite rice alternative, and it works beautifully in a burrito bowl.
Besides being healthy, homemade quinoa burrito bowls are also tastier if you do them right. Here's how.
- Cook the quinoa in chicken or vegetable stock for extra flavor. When all the liquid has absorbed, fluff with lime zest to get the same effect as the rice you'd find at the big burrito chain.
- Make fajita veggies. In other words, sauté bell peppers and onions.
- Add bold flavor to your protein. A quick spice rub goes a long way for plain chicken breast. Cook the strips fajita-style, too.
- Upgrade your beans. Once the chicken is done, deglaze the pan with stock and simmer the drained black beans with lime juice until warmed through and amazing.
- Bring on the heat. Finely chopped jalapeños balance the sweetness of corn.
Make a big batch to enjoy leftovers for lunch throughout the week. It'll make your cube seem a little bit brighter and your coworkers a lot a bit jealous.
