Lemme guess: You've never made a queso fundido before. I'm not surprised. Before this year's Super Bowl, I hadn't either. But I felt like I needed one more thing to serve my friends and I wanted it to be easy peasy. Like seriously easy. When I stumbled upon a chorizo queso fundido recipe, I knew I had found my match.
I didn't know that I had found the most crowd-pleasing, simple-to-make cheesy dip of all time. All you do is literally layer cheese in a baking dish with whatever other ingredients you want in your queso and bake it until the cheese melts. If you're not celebrating Cinco de Mayo tomorrow, now you are.
This one is supreme-ified with lettuce, tomato, and sour cream toppings, but you can really top with whatever you want: avocado, hot sauce, cilantro, you name it. Word to the wise: Queso fundido firms up—fast—so you want to serve it immediately after it comes out of the oven. But not to worry: this thing will be gone so fast you might not even be able to take your first bite.
