If you love mimosas—or strawberries-and-cream anything—sit down or lean against a sturdy wall before clicking play on the video above. You'll need to stabilize yourself, because you might just get weak in the knees thinking about this outrageous (and outrageously easy) dessert.
Soda and cake mix has long been a baking hack, which made us wonder whether we could achieve the same results using a bottle of bubbly. Turns out, you absolutely can, and the end result is even lighter and fluffier than any cake we've ever had before. The texture is almost like angel food cake, though you certainly don't have to use Champers—or even bust out any big-name bubbly. Save that for a toast later; use the cheap-o stuff in this, be it prosecco, sparkling wine or even seltzer. We won't tell if you don't.
The batter will be frothy and foamy when you first start to mix it (ditto for the strawberry mimosa frosting), but it will soon combine into normal cake batter that's slightly on the runny side. Don't freak out—you're doing fine.
If the sight of a box cake mix freaks you out, bear with us: When appropriately doctored, these cupcakes are airy, moist and taste like they came from the trendiest, most overpriced bakery that keeps popping up in your Instagram feed. Plus, the diced, fresh strawberries are beyond refreshing, making for a cupcake that won't bog you down after eating one (or three).
These treats are the perfect surprise for Mother's Day, bridal showers, birthday parties or just, "it's been a long week and I deserve something good while re-watching How to Lose A Guy in 10 Days for the 37th time" nights.
