Warning: this insanely delicious ice cream cake will cause you to do some pretty weird things. You might find yourself eating it for breakfast or singing to it on your plate, both of which may or may not have happened in our (judgement-free) test kitchen. As our site director would say, "It's stupid good."
Once you try the CT Crunch crust, you'll understand. It's groundbreaking and has me wondering what other cereal we can crush into a buttery crust. (Although I'm pretty sure the crazy squares will always reign supreme—because cinnamon-sugar.) To make it, you need absolutely zero technique or skills. If you have a food processor, you could pulse the crunchy cereal into fine crumbs within seconds. But if you don't, or just want to take out some aggression, it's very satisfying to pound and crush the cereal with a rolling pin or your hands.
As far as ice cream goes, please be advised that this cake is not the place to try a trendy and expensive artisanal pint. Do what little young you would do and get a big gallon of plain vanilla. The combination of Cinnamon Toast Crunch, vanilla ice cream and dulce de leche is perfect. Don't mess with perfection.
