Cookie monster everything—cupcakes, bark, fudge—has been popping up everywhere on Pinterest, and this year, it proved it's not just for the Sesame Street-watching set, becoming an unexpected hit at Coachella.

Almost immediately, Afters Ice Cream became one of the most-tweeted about trucks at the music festival, where the emphasis on what you post on social seems even more important than the bands playing. Ice cream cones are well-known Instagram gold (seriously, they rack up likes faster than Beyoncé's "Becky with the good hair" rumors could spiral out of control), but the brand's towering, Technicolor scoops take things to the next level.

No flavor, however, was quite as impressive as the nostalgia-inducing, electric blue Cookie Monster variety. We just had to make our own.

We've dabbled in no-churn ice cream many a time, continually freaking out over that incredible mix of heavy cream, sweetened condensed milk and vanilla extract, which requires little more than a hand mixer (or a strong arm and a whisk) and a freezer. This time, the process is pretty similar—beat heavy cream until stiff peaks form, blend in the condensed milk and vanilla—only you're adding a teaspoon of blue food coloring as you whip in the latter ingredients. A teaspoon gives it the bright blue color (which is still light enough that it won't stain your teeth!), but if you want it that super bright blue, you may have to spring for a little more. Your call.

We used a blend of crumbled Chips Ahoy cookies and Oreos, which soften ever so slightly as the ice cream sets in the freezer, infusing the cream and tasting kind of like a cookie that's been dipped for 2.5 seconds in a glass of icy milk. You know what I'm talking about.

To top off the elementary-school throwback, we topped it with Cookie Crisp cereal. You don't have to, but they (and the mini Oreos) do add an undeniable cuteness to the dessert. And just the right level of Coachella-level swagger to keep your Insta game strong.
