Boston cream pie is a weird obsession of mine. When I was younger, there was this restaurant in my town that specialized in pie and I remember begging my parents for a slice of that chocolate-y, custard-y goodness every single time we went. Then they started selling slices of the restaurant's pie at the grocery store and all bets were off.
I think it's the combo of chocolate and custard that really gets me going. I'm actually surprised "Boston cream" hasn't penetrated more of the dessert world, because I've never met a soul who doesn't like it. Where are the Boston cream donuts, cookies, etc? Luckily, team Delish is on the case, and when they had the idea to turn my favorite pie into pancakes, I was bowing down at their brilliance.
The good news is they couldn't be simpler. Just make your favorite pancake batter—we used vanilla cake batter in ours to make it extra Boston creamy—whip up an easy custard, and start stacking. But the finishing touch is really pouring that glorious chocolate ganache all over the place—it's so decadent it makes me yearn for another bite just thinking about it.
