Everyone knows burgers and dogs are a regular on tailgating and Game Day menus, but the always-thinkin' Brothers Green knew they didn't want their sliders to have regular buns. (Too boring!) Instead, they vowed to venture where no one has gone before with the burger bun and swapped the bun for a fried slab of mozzarella.
If you need a minute to process this, we get it. Maybe try to really understand what went down in the Delish kitchen last month: The Brothers cooked tiny beef burger patties—nothing fancy, just make whatever you like—in a skillet, then came the magic. They sliced thick pieces of mozzarella (it's important to skip the fresh ball of mozz here; go for the low-moisture kind that's drier), dredged them in bread crumbs seasoned with dried parsley flakes and salt and pepper, and then added those dredged slabs to a skillet of hot oil to start to cook. Once the mozz gets warm and develops a gorgeous golden crust—and so melty—throughout, you know they're ready to sandwich the burger patties. The result is a total cheese-fest in every bite (it's a slider, so they're the two most magical bites of your life).
