Carrot Ginger Dressing

Ingredients
For the dressing
- 1 cup
vegetable oil
- 1/3 cup
rice wine vinegar
- 2
carrots, roughly chopped
- 3
green onions, white part only, sliced
- 2 Tbsp.
minced ginger
- 2 Tbsp.
soy sauce
- 1 Tbsp.
honey
kosher salt
Freshly ground black pepper
For the rice bowls
- 1 cup
white rice
- 1 1/2 cups
Shredded chicken
- 1
avocado, sliced
- 1 cup
baby spinach
Directions
- Step 1In a food processor or blender, combine vegetable oil, rice wine vinegar, carrots, green onions, ginger, soy sauce and honey. Blend until smooth and season with salt and pepper.
- Step 2To make rice bowls, cook rice according to package instructions. Divide between 4 serving bowls, then top each bowl with shredded chicken, avocado, baby spinach and dressing.
