Garlic Parmesan Pumpkin Seeds

Garlic bread meets pumpkin seeds—and the end result is magical.

Ingredients
- 1 carving pumpkin, about 5 lbs or larger
- 2 Tbsp. Extra virgin olive oil
- 1/2 cup grated Parmesan cheese
- 2 tsp. garlic powder
- 1/4 tsp. salt
Directions
- Step 1Preheat oven to 300 degrees F.
- Step 2Carve off the top of the pumpkin and scoop out the guts and seeds. Immerse seeds in a bowl of water to clean off the guts, then dry them and place them on a well-greased baking sheet. Bake for 30 minutes to dry them out.
- Step 3Toss seeds with all ingredients. Bake for an additional 10 to 12 minutes, let cool for at least 5 minutes, then serve.
