Vanilla pudding mix is the secret ingredient in this dessert-like loaf. It makes it super moist (sorry!) and adds that classic nostalgic banana pudding taste. Fun fact: It's also what makes our Giant Twinkie Cake so friggin' good.

Ingredients
- 1 1/4 cups
all-purpose flour
- 1/2 cup
granulated sugar
- 1 tsp.
baking powder
- 1/2 tsp.
baking soda
- 1/2 tsp.
kosher salt
- 2
large eggs
- 1 cup
mashed bananas
- 1/2 cup
(1 stick) unsalted butter, melted
- 1
(3.4-oz.) pkg. vanilla instant pudding mix
- 1 tsp.
pure vanilla extract
- 3 cups
Nilla Wafers, divided
Directions
- Step 1Preheat oven to 350°. In a large bowl, whisk flour, sugar, baking powder, baking soda, and salt until well combined.
- Step 2In another medium bowl, mix eggs, bananas, butter, pudding mix, and vanilla until combined. Stir banana mixture into flour mixture until just combined.
- Step 3Line bottom of a (9" x 5") loaf pan with cookies. Pour one-third of batter on top of cookies, then cover batter with another layer of cookies. Pour another one-third batter on top, then add another layer of cookies. Top with remaining batter. Crush remaining cookies over.
- Step 4Bake bread until golden brown and a tester inserted into the center comes out clean, 50 to 55 minutes. Let cool 10 minutes in pan, then remove from pan and let cool completely.
