Taco Lettuce Cups

Ingredients
- 1 onion, chopped
- 2 cloves garlic, chopped
- 2 Tbsp. vegetable oil
- kosher salt
- Freshly ground pepper
- 1 tsp. chili powder
- 1 tsp. cumin
- 1 lb. ground beef
- 1/2 cup tomato sauce
- 1/2 cup chicken stock
- 1/2 cup shredded Cheddar
- Large leafy lettuce (leaves separated), for serving
- 1 avocado, chopped
- Salsa, for serving (optional)
- Sour cream, for serving (optional)
Directions
- Step 1Heat oil in a large skillet over medium heat. Add onions and sauté until soft, about 5 minutes. Add garlic and cook until fragrant, about 30 seconds. Then add the ground beef, stirring occasionally, and sauté until cooked through. Stir in the spices, followed by the tomato sauce and chicken stock. Let simmer for about 5-8 minutes to allow liquid to reduce and flavors to meld. Season to taste with salt and pepper. Turn off heat and set aside.
- Step 2Serve taco meat in lettuce cups. Garnish with cheddar, sour cream, avocado and salsa, as desired.
