In our opinion, mimosas are hard to beat as the reigning brunch cocktail. If you wish the classic bev was just a tad bit sweeter, than these cherry bomb mimosas are the drink for you. We add pineapple juice and maraschino cherry juice before topping with Champagne to create this iconic summer cocktail that we love to serve all season long to add a tropical vibe to any brunch.
We used orange slices as the garnish, but if you just can't do without a rim, feel free to add a sugar or lemon-sugar rim (like we do in our lemonade mimosas). Don't feel like using Champagne? A bottle of Prosecco would work great as well.

pineapple juice
- 1/4 cup
maraschino cherry juice (from the jar of cherries)

bottle Champagne
Orange slices, for garnish
Directions
- Step 1In champagne flutes, combine pineapple juice and maraschino cherry juice. Top off with champagne and garnish with an orange slice.
