These white chocolate peppermint blondies are all dressed up for the holidays and ready to win your Christmas cookie swap. They're easy to make: Just top a peppermint-laced chewy blondie with a layer of snow white frosting and a dusting of chopped peppermints. (Because there’s nothing quite like candy canes to put everyone in the holiday spirit.) Pair these with your favorite hot chocolate recipe. We like our peppermint hot chocolate for a double-dose of holiday mint flavor or a classic hot cocoa to balance things out. Eggnog would pair well with the blondies too.
For the easiest prep, look for a bag of pre-chopped peppermint candies, which is a whole lot easier than chopping the sticky candies yourself. If you can’t find them pre-chopped, you can use any kind of hard peppermint candy or candy canes.
Here's a pro-tip that bakers use all the time: After melting the butter, save the wrapper to grease the baking tin. There’s just enough butter sticking to the paper to ensure your blondies won’t stick to the pan.
P.S. If you have a rimmed quarter-sheet pan on hand, you can use it to bake the blondies, since it has the same dimensions as a 13"-by-9" cake pan.

Blondies
- Step 1Preheat oven to 350°. Grease a 13"-by-9" baking pan with cooking spray. Line with parchment, leaving an overhang on 2 opposite sides.
- Step 2In a medium bowl, whisk flour, salt, and baking powder. In a large bowl, whisk brown sugar, butter, and granulated sugar until combined. Whisk in eggs and vanilla until combined.
- Step 3Using a flexible spatula, fold dry ingredients into sugar mixture until a dough forms. Stir in chips. Scrape dough into prepared pan; smooth top. Bake blondies until golden brown on the edges and a tester inserted into the center comes out clean, 30 to 32 minutes. Let cool completely.
Frosting & Assembly
- Step 1In a small heatproof bowl, microwave chips in 30-second intervals, stirring between each, until melted and smooth. Let cool.
- Step 2In a large bowl, using an electric mixer on medium-high speed, beat powdered sugar, butter, peppermint extract, and salt until mostly smooth, about 1 minute. (Don’t worry if frosting looks clumpy.) Add chocolate and mix on medium-high speed until smooth and fluffy, about 1 minute more.
- Step 3Using parchment overhang, remove blondies from pan and place on a cutting board. Using an offset spatula, spread frosting over blondies. Sprinkle with candies, then slice into triangles or rectangles.
