Ingredients

  • 1 box Moist Supreme Classic Yellow cake mix
  • 1 1/2 cups sweetened shredded coconut
  • 1 20-ounce can crushed pineapple, drained
  • 1/3 cup rum
  • 1 stick butter, melted
  • 1 cup sweetened shredded coconut
  • 1 stick Butter, cubed

Directions

    1. Step 1Preheat oven to 350 degrees F.
    2. Step 2Grease (with butter or oil) a 9x9 square cake pan (see note).
    3. Step 3In a medium mixing bowl, combine cake mix and 1 1/2 cups shredded coconut. Set aside.
    4. Step 4In separate medium mixing bowl, mix together crushed pineapple, rum, and 1 stick of melted butter. Spread over the bottom of baking dish in an even layer.
    5. Step 5Pour cake mix mixture over the pineapple-rum mixture.
    6. Step 6Sprinkle the remaining cup of shredded coconut over the cake mix and top with the remaining stick of cubed butter.
    7. Step 7Bake for 30 minutes or until golden brown.
