Ingredients
- 1 box Moist Supreme Classic Yellow cake mix
- 1 1/2 cups sweetened shredded coconut
- 1 20-ounce can crushed pineapple, drained
- 1/3 cup rum
- 1 stick butter, melted
- 1 cup sweetened shredded coconut
- 1 stick Butter, cubed
Directions
- Step 1Preheat oven to 350 degrees F.
- Step 2Grease (with butter or oil) a 9x9 square cake pan (see note).
- Step 3In a medium mixing bowl, combine cake mix and 1 1/2 cups shredded coconut. Set aside.
- Step 4In separate medium mixing bowl, mix together crushed pineapple, rum, and 1 stick of melted butter. Spread over the bottom of baking dish in an even layer.
- Step 5Pour cake mix mixture over the pineapple-rum mixture.
- Step 6Sprinkle the remaining cup of shredded coconut over the cake mix and top with the remaining stick of cubed butter.
- Step 7Bake for 30 minutes or until golden brown.
