Ben & Jerry's Chunky Monkey ice cream has always been an obsession of mine. With only three flavors: banana, dark chocolate, and walnuts, it's actually pretty simple. And yet, it's so freaking addictive. I'm normally not even a big fan of banana-flavored things, but this magical ice cream defies all logic.
I was inspired. But I wanted to take it a step further. And by that, I mean add peanut butter into the equation. In my opinion, PB makes everything better. Hello, Trash Treats! So, I tinkered around with the "Chunky Monkey" formula, and Funky Monkey ice cream sandwiches were born.
Everyone in the test kitchen went bananas for them (sorry, had to)! The best part? They're almost too easy to make. We baked off some store-bought peanut butter cookie dough as the base, but you could totally use store-bought cookies. Or if you're feeling ambitious, why not whip up a batch of your favorite homemade peanut butter cookies? Just make sure to freeze 'em before sandwiching! Add a big scoop of vanilla ice cream, top with sliced, fresh bananas, and roll the whole thing in crushed, chocolate-covered peanuts.
