Skip the potato chip aisle and make your own at home! Theses low-carb 'chips' are the perfect snack and replacement to your favorite potato chips. Be sure to dry them well before baking so that they can crisp up! The cucumbers on the edge of the pan will also cook faster than those in the center so we recommend taking them off the tray as they finish and let the others keep going for longer!

Ingredients

large thick-skinned cucumber
- 1 1/2 Tbsp.
white distilled vinegar
- 1 tsp.
kosher salt
- 1/4 tsp.
garlic powder
Directions
- Step 1Preheat oven to 225° and lightly grease two large baking sheet with parchment. Using a mandoline or a sharp knife, cut cucumber into slices ⅛” thick.
- Step 2Pat cucumbers dry with paper towels and place in a medium bowl. Add vinegar, salt, and garlic powder and toss to combine.
- Step 3Place cucumbers in an even layer on prepared baking sheets. Bake until dried out, 1 hour and 30 minutes, flipping halfway through. Remove cucumbers from tray as the start to crisp and allow others to keep baking.
