Ingredients
For bread
- 2 cups Bisquick
- 1/2 cup sour cream
- 1/2 cup Seltzer
- 1/4 cup melted butter, plus 1 tbsp for brushing
- 1 Tbsp. maple syrup
- 5 sliced bacon, cooked and crumbled
- 1 tsp. kosher salt
For the filling
- 6 eggs
- 1 Tbsp. Chopped chives
- kosher salt
- Freshly ground black pepper
- 1 tsp. lemon juice, optional*
- 1 Tbsp. butter
- 1 cup Grated Cheddar
Directions
- Step 1Preheat oven to 325° and grease a glass loaf pan. In a large bowl, combine bisquick, sour cream, seltzer, melted butter, maple syrup, bacon and salt and mix until combined. Set aside.
- Step 2In a large bowl combine eggs and chives and season with salt and pepper. If using, add lemon juice. Whisk until yolks and whites are mixed.
- Step 3In a large skillet over medium-low heat, melt butter. Add eggs to skillet and cook, stirring frequently, until they are slightly underdone. Remove from heat.
- Step 4 Pour half of dough into greased loaf pan, spreading to the edges. Add a ½ cup cheese in an even layer, then all the scrambled eggs, and then another layer of remaining cheese. Top with remaining dough. Brush top with butter.
- Step 5Bake until slightly browned, 40 to 45 minutes. Let cool slightly in pan before slicing. Serve warm or at room temperature.
