Ingredients
Cooking spray, for pan
- 12
slices bread, preferably stale
- 6
eggs
- 1 1/2 cups
milk
- 1 Tbsp.
granulated sugar
- 2 tsp.
pure vanilla extract
- 1 tsp.
ground cinnamon
- 1/2 tsp.
kosher salt
Powdered sugar, for serving
Maple syrup, for serving
Directions
- Step 1Preheat oven to 350° and grease a 12-cup muffin tin with cooking spray. Cut bread into ½” cubes and set aside.
- Step 2In a large bowl, beat eggs, milk, sugar, vanilla, cinnamon, and salt until mixture is smooth. Add bread pieces and toss until the bread has absorbed most of the liquid.
- Step 3Divide mixture between muffin tin cups, pressing down lightly on each to make muffin more compact.
- Step 4Bake until bread is toasted and muffins are cooked throughout, about 25 minutes. Let cool in muffin tin for 5 minutes.
- Step 5Dust with powdered sugar and serve warm with maple syrup.
