Ingredients
- 4 lb. potatoes, peeled and cut into evenly sized pieces
- kosher salt
- 2 Tbsp. butter
- 2 Tbsp. all-purpose flour
- 2/3 cup beer, such as IPA
- 2/3 cup milk
- 1 cup shredded white Cheddar
- 1/2 cup shredded yellow cheddar
- 1/2 tsp. garlic powder
- 1/2 tsp. smoked paprika
- Freshly ground black pepper
- 1/2 cup sour cream
- 2 Tbsp. chopped chives, plus more for garnish
Directions
- Step 1In a large pot, cover potatoes with water and add a generous pinch of salt. Bring to a boil and cook until totally soft, 16 to 18 minutes. Drain and return to pot.
- Step 2 In a medium sauce pan over medium heat, melt butter. Whisk in flour and cook 1 minute. Slowly add beer and milk to flour mixture, stirring constantly. Continue whisking over medium heat until mixture has thickened, about 3 minutes. Remove from heat and stir in cheese until fully melted. Season with garlic powder, paprika, salt and pepper.
- Step 3Mash potatoes in the pot they were boiled in. Add cheese sauce and stir until fully incorporated into mashed potatoes. Add sour cream and chives and fold into potatoes, and season with salt and pepper. Transfer to serving bowl and garnish with chives. Serve.
