One of the things that I’m always missing from a baked potato is that it lacks the crispy and crunchy bits of French fries or roasted potatoes. Don’t get me wrong! I love all potatoes equally, but this easy recipe gives you an appetizer that’s fun, has all the textures you’re looking for, and a wide range of toppings of your choice.
Why stop with cheddar? This is your canvas and your pantry is your brush. I went with classic sour cream, chives, and bacon bits, which you’d usually find in a traditional baked potato. But feel free to use your favorite go-tos or whatever you’ve got on hand. The possibilities are endless!
Using chopsticks or skewers here helps ensure you don’t cut the potato all the way through. It’s a seamless and foolproof way to make sure they don’t fall apart on you. After that, it’s just baking and broiling, and your perfect side dish is ready to go.

Ingredients

large russet potatoes (8- to 10-oz. each)
- 1/4 cup
extra-virgin olive oil
Kosher salt
- 1 cup
shredded cheddar
Sour cream, sliced chives, and bacon bits, for serving
Directions
- Step 1Arrange a rack in center of oven; preheat to 425°. Scrub and dry potatoes. Cut off about ¼” from one long side of each potato. (This will help keep the potatoes stable on the cutting board.) On cutting board, arrange a potato cut side down in between 2 chopsticks. Make ¼” slices, being sure not to cut all the way through, using the chopsticks as a safeguard. Turn potato 90° and make perpendicular slices to the previous ones. Repeat with remaining potatoes.
- Step 2Arrange potatoes on a parchment-lined baking sheet. Lightly brush potatoes with oil; season with salt.
- Step 3Bake potatoes until inside is tender and outside is crisp, 40 to 50 minutes.
- Step 4Turn broiler on high. Sprinkle potatoes with cheddar. Broil, watching closely, until cheese is melted, 30 to 60 seconds.
- Step 5Divide potatoes among plates. Top with sour cream, chives, and bacon.
