When I'm hosting a veggie BBQ, it's easy to turn to my favorite plant-based hot dogs. That being said, when I'm looking for a homemade version, want a more veggie-forward option, or simply want to skip running to the store, I turn to these carrot hot dogs. To turn carrots into an incredible hot dog alternative, I marinate them in a smoky, umami-packed, and slightly sweet mixture that not only adds so much flavor to the carrots, but slightly softens them. After then roasting them in the oven, they become just tender enough to have the perfect bite nestled in hot dog buns.
Once your carrot hot dogs are ready, you can really top them however you would your favorite hot dog! Drizzle on ketchup, mustard, and our zucchini relish for a classic version, or take inspiration from any of our favorite hot dog recipes (Chicago-style or Big Mac, anyone?), swapping out the classic dog for this carrot version. Pair with your favorite barbecue sides, and you've got a perfect cookout for vegetarians and meat-eaters alike.

Ingredients

medium carrots, peeled and skinny ends trimmed
- 2 Tbsp.
extra-virgin olive oil
- 1/4 cup
low sodium vegetable broth
- 1/4 cup
apple cider vinegar
- 2 Tbsp.
soy sauce
- 1 tsp.
maple syrup
- 1/2 tsp.
garlic powder
- 1/2 tsp.
smoked paprika
- 1/2 tsp.
liquid Smoke
- 8
hot dog buns
Ketchup, for serving
Mustard, for serving
Directions
- Step 1Add the carrots to a small roasting pan and toss with olive oil. In a small bowl, whisk together broth, vinegar, soy sauce, maple syrup, garlic powder, paprika and liquid smoke. Pour over carrots and cover pan with foil. Let sit for 30 minutes.
- Step 2Preheat oven to 425°. Place the foil-covered baking dish in the oven and roast carrots for 30 minutes. Remove the foil and roast for another 20 minutes, until the carrots are just tender enough to stab with a fork.
- Step 3Place carrots in hot dug buns, serve with ketchup and mustard.
