Ingredients
- 1 12 oz. package No Yolks Whole Grain Extra Broad Noodles
- 1 ripe avocado, roughly chopped
- 1/2 cup mayonnaise
- 1/3 cup sour cream
- Juice of 1 lemon
- 1 clove garlic, roughly chopped
- kosher salt
- Freshly ground black pepper
- 1 cup parsley leaves and tender stems, roughly chopped
- 1/4 cup chives, roughly chopped
- 1/4 cup tarragon leaves
- 1 cup basil leaves, roughly chopped
- 3 cups packed baby spinach
- 3 cups cherry tomatoes, halved
Directions
- Step 1Cook No Yolks Whole Grain Extra Broad Noodles according to package directions. Drain.
- Step 2In a food processor fitted with the blade attachment, combine avocado, mayo, sour cream, lemon juice, and garlic. Season with salt and pepper and blend until smooth. Add herbs and blend until finely chopped.
- Step 3In a large serving bowl, add cooked noodles and toss with dressing, spinach, and cherry tomatoes. Serve cold or at room temperature.
